How to Prepare Sobolo (Hibiscus Drink) – Tillyfoodies Style

Sobolo, also known as Bissap, Zobo, or Hibiscus tea, is a refreshing West African drink made from dried hibiscus petals. It has a tangy, fruity flavor and is often infused with spices for a unique taste. It’s perfect for cooling off on a hot day or serving at gatherings.
Ingredients:
2 cups dried hibiscus petals (sobolo leaves)
6 cups water
1-inch ginger (grated)
1 teaspoon cloves (optional)
1 teaspoon Negro pepper (optional)
1 pineapple (peeled and blended) or pineapple juice
½ cup sugar or honey (adjust to taste)
1 teaspoon black peppercorns (optional for a spicy kick)
1 teaspoon lemon juice or lime (optional)
Fresh mint leaves (for garnish)
Instructions:
Rinse the hibiscus petals to remove any dust or dirt.
In a large pot, bring the water to a boil and add the hibiscus petals, ginger, cloves, Pineapple rind, and peppercorns (if using).
Let it simmer for about 15–20 minutes, allowing the flavors to infuse.
Remove from heat and strain the mixture to remove the petals and spices.
Add blended pineapple juice and sweeten with sugar or honey, stirring until dissolved.
Allow it to cool, then refrigerate for at least an hour for a chilled, refreshing drink.
Serve over ice and garnish with fresh mint leaves or lemon slices.
