  • 1 scotch bonnet pepper

  • 2 onions

  • 2 teaspoons thyme

  • 1 bay leaf

  • 1 teaspoon curry powder

  • 1 teaspoon salt

  • 1/2 cup olive oil

  • 1 cup meat stock

  • 1 clove garlic

  • 1 teaspoon ginger paste


Cooking Procedure:

  • Blend the tomatoes, red bell peppers, and Scotch bonnet peppers into a smooth paste in a blender or food processor.

  • Heat a large pot on medium heat, and add the vegetable oil.

  • Add the chopped onions to the pot and sauté until they become translucent.

  • Add the garlic and ginger paste to the pot, and sauté for a few seconds.

  • Add the tomato paste and stir, allowing it to cook for a few minutes.

  • Add the blended pepper mix to the pot, and stir to combine with the tomato paste. Let it cook for 15 minutes on medium heat until the sauce slightly thickens.

  • Add thyme, curry powder, and bay leaf to the pot, and stir.

  • Pour meat stock into the pot, stirring to combine.

  • Add the rice to the pot, and stir to ensure it is well coated with the sauce.

  • Cover the pot with a tight-fitting lid and reduce the heat to low.

  • Allow the rice to cook for 30 minutes, until it is fully cooked and the liquid has been absorbed.

  • Serve the Jollof rice with your choice of protein, Plantain, salad, or coleslaw.
